As usual, we ask:
 
What would you have for your last meal on earth?  A drink, a starter, a main course and pudding?  You never get full and you can be wherever you want in the world…
 
I would be in West Cork, where I am from. The rugged coastline, the salty air that makes you feel like you have just had a sip of champagne. The fishing villages dotted along the coast have the most magical pubs, with freshly caught fish & seafood, the best pint of Guinness you will have in your life, incredible music sessions & of course the warmth and friendly Irish....

So my last supper would be in a pub in West Cork. Fresh crab with a hit of flat-leaf parsley, lightly tossed in creme fraiche, lots of lemon and loads of freshly ground black pepper, served on buttered soda bread.
A slow braised lamb stew made with cutlets, with pearl barley and served with mashed buttery turnip.
And for dessert my Mum's butter pastry apple tart with cream. Food is about memory for me, there is nothing that can bring me back to a moment in the past more than taste…
